This is a gluten free Mix with a base of sweet rice flour (as is the custom for mochi), with the sweet, yammy, almost-coconutty flavor of ube, courtesy of actual ube – in the form of ube powder.
There’s no fancy finagling needed to create colorful, chewy, really darn delicious pancakes. Just add water, eggs, and oil or butter to bring to life a batter that’s ready to become a breakfast bonanza.
